Peach Cobbler Easy

This recipe is so simple and delicious, it takes no time at all to make. Use either peaches or nectarines when they're in season. You can also use strawberries and blueberries combination.

Filling:

 

  • 4 cups sliced peaches or nectarines
  • 1/2 cup cold water
  • 1/3 cup brown sugar
  • 1 tbsp cornstarch
  • 1 tbsp unsalted butter




Topping:

 

  • 1 cup plain flour
  • 1/2 cup sugar
  • 1/2 cup cold milk
  • 1 1/2 tsp baking powder
  • 4 tbsp butter (softened)




How to make Peach Cobbler:

 

  1. First, pre-heat the oven to 350 degrees
  2. TOPPING: Using a bowl, stir in the flour, sugar and baking soda. Add the milk and butter and beat everything till you get a smooth texture
  3. FILLING: Using a saucepan, add all the ingredients for the filling
  4. Cook and stir over low heat till mixture becomes thick and bubbly (5 to 10 mins)
  5. Pour into an ungreased glass baking dish
  6. Spoon filling and spread topping evenly on top
  7. Sprinkle with cinnamon sugar
  8. Bake for 30 to 40 mins till topping is golden (or stick a stick into the middle - it should come out clean when it's done)
  9. Serve warm with a dollop of vanilla ice cream or thick cream

Coriander Oats Rava Idli Instant

1/2cup Rava/Semolina
1cup Rolled oats
1+1/2cup Sour yogurt
1/2tsp Eno salt
1/2cup Coriander leaves
1tsp Ginger (grated)
2nos Green chillies
1/2tsp Cumin seeds
Salt
Oil

Grind the coriander leaves,ginger,cumin seeds and green chillies with half a cup of yogurt as fine paste...Grind coarsely the rolled oats, now take the rava,grounded rolled oats,grounded coriander paste,salt and remaining yogurt together in a bowl as thick batter, finally add the eno salt,give a quick stir and pour the batter in a greased idli plate..Steam cook in idly cooker for 15-20minutes..

Serve with any spicy chutney or sambar. Enjoy !!!

Mixed Greens Sautéed



Mixed Greens Sautéed
Serves about 4 as a side dish

2 Tablespoons extra virgin olive oil
1/4 cup chopped onion
1 clove garlic minced
1 cup frozen spinach
8-10 leaves of escarole
1/2 a bag of arugula, about 4 handfuls

Heat a large skillet over medium high heat. Add the olive oil and when hot, add the onion. Cook for three minutes, stirring frequently with a wooden spoon, add the garlic and cook for just 30 seconds then add the spinach and the escarole. Cover and turn the heat down to low. Let it cook for a minute or two, just until the spinach barely defrosts. Remove the lid and stir, then add the arugula and stir. The arugula will wilt very quickly, in just a couple of minutes.
Season with salt and  done. Enjoy !!!

Low fat brownies

I love Brownies but folks at home dont, so baking brownies becomes rare. I baked these low fat brownies for Divya's Brownie Event. Iam making into the event at last minute desperately, as i very badly missed not being part of her Very Famous Best Chocolate Cake Event.

Fudge Brownies

I just want to share 2 Brownie tricks. one is Brownie takes less flour compared to Cakes. second is cooling the baked brownie for atleast 40 minutes is a must. These Low Fat Brownies dont ask for Butter, but still you will never miss butter in brownie. The Guilt part is the Egg's.

Recipe from GoodHouseKeeping's Cakes and Bakes.

Ingredients:

Makes about 12-16 brownies

Olive Oil / Sunflower Oil - 50 ml / 2oz.
Dark Chocolate - 250 gms
Egg's - 3
Demerara Sugar - 150 gms / 5 oz
Vanilla extract - 1 tsp
All Purpose Flour - 75 gms / 3oz
Baking Powder - 1/4 tsp
Cocoa Powder - 1 tbsp
Butter - 1 tsp for Greasing the Cake Tin.

Method:

Pre- Heat the oven at 180C. and Grease the Cake Tin with Butter and set aside.

Melt the Dark Chocolate by placing in Microwave for 30 seconds at 900W. or melt the chocolate by double boiler method and let the chocolate cool after melting.

Break the Eggs into a large bowl, add Oil, Sugar, vanilla extract and whisk well.

Sift the Flour with Baking powder and cocoa powder and mix the flour to the large bowl which had egg-oil whisked. Mix them all together.

Mix Melted Chocolate to the bowl. mix with a wooden spoon. mix very lightly, as the chocolate thickens up the mix so quick. Transfer the mix to the Greased pan.

Place the Pan on Oven and Bake it for 20 minutes.
Once baked, check the brownie by inserting a toothpick close to the centre of the brownie , it comes out clean.

Cut the Bownies, while its still on the pan. and let them cool for about 40 - 60 minutes in the pan.

Remove the Bownies from the Pan and Serve with Ice-Cream.

Low Fat Brownies

To Store, wrap the brownies with cling film and store it in air-tight container.

This is an easy cheesecake recipe that is topped with a delicious sour cream and sugar topping. It gets rave reviews at every family gathering!
Ingredients:
2 (8 oz.) cream cheese, softened
2/3 cup sugar
3 large eggs
1/2 tsp. vanilla
3 tbsp. sugar
8 oz. sour cream
1 tsp. vanilla
Easy Cheesecake #2 Directions:
1. Beat cream cheese, 2/3 cup sugar, 3 eggs, and 1/2 teaspoon vanilla with mixer until smooth. Pour into well greased 9 inch pie plate.
2. Bake 22 to 25 minutes at 350 degrees F. Turn oven off. Remove cheesecake and cool for 5 minutes.
3. Combine 3 tablespoons sugar, sour cream, and 1 teaspoon vanilla. Spread over warm cheesecake and return to oven for 5 minutes.
4. Cool and refrigerate.

2 tsp. vanilla
1 c. sour cream
8 oz. Cool Whip, slightly thawed

1. Beat cream cheese until smooth, add sugar and mix well. Add sour cream and vanilla, mix well. Fold in Cool Whip.

2. Spoon into pie crust and chill for 4 hours.

Here's a recipe for whole wheat pizza dough. Besides being super tasty, using whole wheat has got a lot of health benefits as well. Whole wheat is nutritionally superior to refined flour. It is richer in protein, minerals, vitamins and antioxidants and lowers the incidence of obesity and a lot of diseases like cancer, diabetes and hearth diseases.


Ingredients Required

* 1 tablespoons granulated sugar or honey
* 1 1/4 cups warm water (110F)
* 1 (1/4 ounce) pack dry yeast
* 1 1/4 cups all-purpose flour
* 2 cups whole wheat flour
* 1 teaspoon of salt
* 1/4 cup olive oil




Step by Step Procedure

1. Dissolve sugar or honey in water and add yeast.
2. In a separate bowl, combine flours.
3. Allow to sit until the yeast foams slightly (about 5 minutes).
4. Combine 3 cups of the flour and salt in a bowl. Pour the yeast mixture and oil if you are using it.
5. Knead the mixture, gradually adding enough of the remaining flour mixture so that the dough is no longer sticky. Continue kneading until the dough is smooth and elastic (another 10−15 minutes by hand).
6. Shape dough into a ball and put in an large oiled bowl, turning the dough to coat it with the oil.
7. Allow to rise until doubled in size (45 minutes to 1 hours).
8. Punch down the dough and divide into 2 pieces. This will make two 12 inch pizzas.
9. Shape each portion into a 12" circle either by hand or with a rolling pin, stretching out as necessary to achieve a thin dough. For a lighter crust, let the dough sit for a half hour after shaping before constructing pizza and baking.
10. Spread sauce over crust and top with cheese and desired toppings.
11. Allow to rest in a warm location for 15 minutes.
12. Bake in a 475 degree oven until crust is golden, about 20 minutes.

* 1 envelope of dry yeast
* 1/4 teaspoon of sugar
* 3/4 cup of lukewarm water
* 1 3/4 cups of unbleached plain flour
* 1/2 teaspoon of salt


Step by Step Procedure

1. Combine 1 envelope of dry yeast, 1/4 teaspoon of sugar and 3/4 cups of lukewarm water. Mix a little and let sit for 6-8 minutes.
2. Combine 1 3/4 cups of unbleached plain flour with 1/2 teaspoon of salt in a bowl or food processor.
3. Pour the water combination into the bowl (or food processor) and mix until ready to knead (around 30 second in a food processor). If using a bowl, mix with a spoon until you have a neat ball.
4. Prepare a lightly spinkled surface with flour. Turn out dough and knead for around 2-3 minutes. Lightly cover your finger tips with flour if the mixture is a little sticky.
5. Roll out by hand for a 12'' base.
6. Place in 12'' lighly oiled oven pan. Press out dough to form a slight lip.
7. Prepare and apply your sauce and topping or choice.
8. Cook in a pre-heated over (500F) for 8-12 minutes (times may vary based on different ovens. Fan assited oven will be quicker!).
9. Remove from oven, slice and share with your favourite friends and/or family members :)

Additional Information

* As stated above, fan assisted ovens tend to cook pizza's quicker than traditional ovens.
* You can usually reheat your pizza in around 5 minutes. But beware that it's not advisable to reheat pizzas with a meat topping.
