IDLY FRY - VERSION 2

Recently my MIL was telling about the idly fry she had in her brother's place. I was attracted by the simple recipe and we tried with the left over idlies.It was very nice & tasty. Usually i add G&G , garam masala to make the fry. But this version is completely different from mine.No need to deep fry the idlies too. So its an easy & low calorie food.Do try this let me know friends.

INGREDIENTS :

  • Left over idlies - 15 nos
  • Sesame oil - 2 tbsp
  • Salt - As needed.

To roast & grind :

  • Coriander seeds - 1 tbsp
  • Red chilly - 4 nos ( long variety )
  • Grated Coconut - 1 tbsp
  • Small onion - 10 nos or Big onion - 1 no
  • Jeera / cumin seeds- 1/2 tsp
  • Cooking Oil - 1tsp

To temper :

  • Mustard seeds - 1 tsp
  • Urad dal - 1 tbsp
  • Channa dal - 1 tsbp
  • Curry leaves - few
  • Cooking oil -  1tbsp

To garnish :

  • Coriander leaves - few

Lemon juice - few drops to taste.

METHOD :

  • Heat oil in a kadai and roast the items given under 'To roast & grind ' except coconut.
  • Grind all the roasted items along with grated coconut.Add little water & grind to a smooth paste.Set aside.
  • Cut the idlies into small cubes.Mix the ground paste and toss well. Take care the idly pieces should not break.
  • In a wide mouthed kadai , add oil and temper the items given above .
  • Now add the masala coated idly pieces and saute well for few minutes by simmering the flame.Saute till the raw smell of masala disappears.
  • Switch off the flame and add the lemon juice.
  • Garnish with coriander leaves.

Serve hot !!

This week's best drink buys


You might be the kind of person who thinks the beginning of November is FAR too early to start planning what you're going to eat and drink over Christmas (me too) but the supermarkets have decided otherwise.

When I walked into Sainsbury's yesterday the drinks deparment was packed with special offers - and some quite spectacular ones too. Leaving frugal options aside for the moment you can pick up the particularly lush Glenmorangie Nectar d'Or whisky at the moment for just £25 instead of £39.99 (and £42.95 at royalmilewhiskies.com) Aged in Sauternes casks it's a lush cross between a sweet wine and a whisky that would be superb with the Stilton and maybe - though I haven't tried it yet - with mince pies. A terrific gift for any whisky lover.

They also had a couple of good champagne deals: Heidsieck Monopole Blue Top for £14.99 instead of £29.99* and the much improved Lanson Black Label for £21.99 instead of £31.99 - but then Morrisons currently has it for £15 according to The Wine Detective.

In terms of budget buys you probably couldn't do much better than Dow's Trademark port - that's also reduced by 50% in Sainsbury's from £13.43 to £6.71. The style is referred to as Finest Reserve which means it's halfway between a basic ruby port and a Late Bottled Vintage in quality. If you're looking for a sweet, brambly warming Christmas port from a reputable producer it would fit the bill perfectly. (I also like adding a dash of this style of port to a mulled wine).

Rather less good value is the current offer on Baileys cream liqueurs which are reduced in Sainsbury's from £19.79 to £9.89. I know it's a good reduction for a litre bottle but since when did they go up to that kind of price? Asda's regular price for the same size bottle is £14 and they currently have it down to £9 but there are loads of perfectly good own label versions around for a fair amount less.

Marks and Spencer, for instance, has its new Toffee and Pecan Cream liqueur on offer for £6.99 currently. I don't much like cream liqueurs but I must admit I did find it a bit moreish. M & S told me this week that toffee and pecan flavours are HUGE for them.

Anyway if you miss these offers don't panic. There will be plenty more where they came from over the coming weeks but don't leave it until the week before Christmas when I'm pretty sure a lot of the prices will shoot up again

Chicken and Salad from Jamie Oliver

I received 'Jamie's America' for Christmas - just a beautiful book. The photos of not only the food but also the places visited are spectacular. I haven't spent a lot of time with this book yet, but 2 recipes jumped out at me and demanded to be made- Southern Pecan and Apple Salad, and Competition Chicken.

I have a weakness for bbq - good bbq, real(ish) bbq, and this chicken is definitely the best bbq chicken I've made. That didn't use a bbq.

New Italian Cookbooks 2011

I'm not sure any other cuisine can top Italian, when it comes to comfort food. While Italian cookbooks are a dime a dozen, three really stood out for me this year and are nice enough variations to warrant adding to your collection if you're an Italian food fiend like me or give them as gifts.

Cucina Povera
Cucina Povera Tuscan Peasant Cooking was sure to strike a chord with me, because I lived in Florence for 6 months. It is written by ex-pat Pamela Sheldon Johns and it shares a way of life, of not wasting anything and eating frugally. In the book you'll meet all kinds of people from Italy who cook and garden and make things from scratch. The recipes are for some things you may already know about like Ribollita and Pappa al Pomodoro (and if you don't, then by all means you need this book) but also more obscure recipes that you are unlikely to encounter in a restaurant.

Recipes you'll want to try include Tuscan Cornmeal, Kale and Bean Soup, Stewed Peppery Beef Cheeks, Farmyard Crostini (finally a use for giblets!) Plum Jam Tart and Ricotta Cake.






Piatto Unico
The family I lived with in Italy ate very formal meals, I don't remember a single one course meal. But they do exist and that is what Piatto Unico is all about. The book shares hearty, comforting dishes many that are particularly perfect as we head into Winter. Recipes are divided into chapters like Prime-Time Pastas, Minestrone and Other Big, Bountiful Soups and Braises and Stews.

Recipes you'll want to try include: Asparagus Spinach Crepes with Taleggio, Thick Chickpea and Porcini Soup, Escarole, Anchovy and Cheese Salad.











Rustic Italian Food
Another noteworthy book is Rustic Italian Food. This is satisfying and lusty food, not fussy food although many of the recipes do take effort and are not just weeknight jobs. It's filled with homemade breads, pastas, salumi, pickles and preserves. They all demand the use of top quality ingredients. It's written by a restaurant chef, but designed for home cooks.

Recipes you'll want to try include: Spaghetti in Parchment with Clams and Scallions, Eggplant Lasagnette Alla Parmigiana, Veal Breast 'al Latte' with Fried Sage, Cold Farro Salad with Crunchy Vegetables

UPMA URUNDAI

Last weekend i was breaking my head thinking about wat to prepare for dinner.Finally i asked my hubby what he wanted to have. He told me to prepare upma urundai and also he said its been a very long time we prepared this.Yes , I agreed i totally forgot about this dish.Immediately i gave a call to my MIL for the recipe and made it. It was tasting soft  and excellent. Thanks to my hubby for reminding this yummy tiffin.Also i've got a different recipe to share with u all  :)

INGREDIENTS :

  • Raw rice - 1 cup
  • Toor dal - 1/4 cup
  • Water - 2 cups

To temper :

  • Cooking oil - 1 tbsp
  • Mustard seeds - 1/2 tsp
  • Urad dal - 1/2 tsp
  • Asafetida /Hing - 1/4 tsp
  • Green chilly - 1 no ( cut into two)
  • Ginger - 1 inch piece ( cut into small pieces)
  • Curry leaves - A few

Salt & water - as needed.

METHOD:

  • Soak the rice and toor dal together for two hours.
  • Coarse grind the rice & dal mixture in a mixie. Run the mixie only once.(Please do not grind for more time) The rice & dal should be just broken.
  • Now in a broad kadai , temper all the items given above in the same order.
  • Add 2 cups of water and the required salt.Allow it to boil.Now add the ground rice mixture.Mix well for sometime without forming lumps.Let it thicken.
  • The rice absorbs all the water and becomes a non sticky dough.
  • Let it cool down. Now grease the idly plate with little oil. Make balls out of the dough and arrange it in the greased idly plate.Steam the balls for 10-15 mins.

Soft , hot upma urundai is ready to serve. We enjoyed with the sambhar i made for lunch. U can have it with any chutney. Sometimes this can be made as a evening snack without any accompaniment.
